It isn't possible to edit Oracle tables directly from Paradox. However you can create a form in parados en edit the data in the form. You have to make sure you turn off the read-only option in the forms datamodel. (Right-clik on the tablename in the datamodel). You can also update Oracle tables through a paradox update query.
