Like this:

  1. Start-->Programs-->Administrative Tools-->Services
  2. Look for a entry under the Name column of OracleService[SID name] For example, if the SID name is Test, you would look for OracleServiceTest
  3. Right-click on this entry and click on Properties
  4. Set the startup type to Manual and then OK.

The next time you reboot, Oracle will not start automatically.

When you want to manually start Oracle, right-click on OracleService[SID name]
and then click on Start. You can verify the service is stopped or started by pulling up Task Manager and looking for the oracle.exe process.
