I have set up our system with a combination of RAID levels. Rollback segs and redo logs are on mirrors. Logging, software and prod database are on RAID5, and reports, test databases, misc files are on stripes or plain concat volumes.
Your setup depends on how many physical disks you have. You need at least 4 to run RAID5, then probably 4 others, 2 for the rollback seg mirror and 2 for the redo log mirror.
It all depends on the load too - you might be able to get away with less.
