You could also consider hooking up a 3rd party tool to batch convert one format to the other. Ours for example takes PostScript (PS) as input and outputs formats like XML-standard SVG, raster image TIFF, ASCII text files and Windows Metafiles. It is a small dedicated command line driven engine that will run on a server (Windows, Sun Solaris, HP-UX, IBM AIX) and can easily be automated.
As for PDF: any reason why you would not use Acrobat Distiller to turn PostScript to PDF?
