In my last job we designed a shop floor control system. You could simplify the concept for class:

Display work orders containing instructions on how to assemble something.

Each Work Order has parts needed for it. Each Work Order must have a place for "signatures" to buyoff or complete the work.
There needs to be a "Dispatch" or display showing the work that needs to be done.

Obviously, real-life gets way more complicated, but the concept is good and might make a nice project.
