Help with Forms 4.0 Menus

I have two issues that im struggling with...
- first I simply want to remove a menu item from the menu, but for some strange reason, don't seem to be able to do so...
- The menu Title displays as the name I have given the menu option ie/ STARTMENU, yet I have set the title to something else... Can't figure out why its not displaying...
Any help would be greatly appreciated....
