Richard,
Your options are basically two.
- Continue running in NOARCHIVELOG as you are now, in which case you MUST do a cold backup i.e. shut down database and copy all files - including redo log files. Be aware that when you do a restore you will lose all changes made since the last cold backup.
- Switch to ARCHIVELOG as suggested, you then have the option of doing either hot or cold backups. This also allows you a lot more flexibility about backing up and restoring - individual tablespaces, partial recovery etc etc.
There is a bunch of documentation available on the subject of backup & recovery. I suggest you check it out - it is an interesting (and complex) subject ...
