Did you check the listener.log file on the server? (default location $ORACLE_HOME/network/log).
If this doesn't tell you anything interesting you might try enabling tracing for the listener.
If I understand you well the listener doesn't really crash (i.e. process is stopped) but it doesn't function properly anymore. Or does it indeed crash?

Something worth while checking might be some system parameters like max open files, or max. no. of processes, be it on a user level or system wide.
