Have you considered Linux? Given your background as a Unix Systems Administrator I suspect you would be more comfortable with Linux than with NT.
But, to answer your question intalling NT or 2000 is a no brainer. It goes something like:
Boot system and get to (oops can't say prompt here - how about cursor without hourglass)
