I think the clearer way to say it is that in these languages, variables do not have type.

There are some people who assert that "dynamically typed" languages are not typed at all, and that the term "type" refers specifically to statically checkable properties. But the term "dynamically typed" is in pretty heavy use, so that's probably a losing battle.
