Having just increased our redo logs for the same reason, check the documentation, but I believe the following are true:
to increase the redo log group members or groups - can be done on-line,,,
to increase the SIZE of redo logs - require a restart of the DB
in change the LOG_INTERVAL (set it to be more than the size of the redo log size) - can be done online.
