If you use Designer/2000 Release 2.1 (havent't tried with 1.x), try the following:

1. Open the server model diagram in the design editor
2. select all tables
3. Hit CTRL-C
4. Open the Word Document and move the cursor to the appropiate place
5. Hit CTRL-V

You might need to do some resizing now, but it's as simple as that!
