Go to Tools->tools options and press the edit masks button.
Select Display: DATE. In Mask: enter DD-MON-YYYY and then press the ADD button.Then press OK.
This should make the new format mask available in the list of formats for fields.
If it does not, you will have to re-start the designer app.
