Technically, the command that creates *instances* (not databases, since they're different) is "startup". So all you have to do is issue the startup command several times, ensuring that you've changed your ORACLE_SID in between times.

I suspect that's not what you're really after though. You probably want to create multiple databases, which is an altogether different matter.

You could probably do worse than learn the difference between instances and databases and schemas before going much further (as could some of the people who've responded to you already). The Oracle Concepts guide is the main document of use here, but you could also have a hunt round the 'Net to discover some user-friendly documents on the same subject.
