I can recommend you the book "Oracle Backup&Recovery Handbook" from Oracle Press/Osborne/McGrawHill. Besides invaluable Information on backup and recovery, there are some undocumented commands documented. The internal structures are not explained, but there are commands that allow you to dump: control-files

file-headers
redo-logs
data-blocks

In the dump the most important fields have somewhat meaningful names.
