Hi boggy

my two cents worth.

If you're running 7.3 the creation scripts for the demo database are in orant\database called buildall.sql, scott.sql or something like that. Just have a look for the .sql files in this directory and you should be able to follow them ok. A better way might be to use the default database that's created and modify it.
