We do have a stress test database which resembles the production pretty closely. The problem is, it is hard to synchronize it with production due to security concerns. Each time we release a new version of the stress test database, we have to protect everything that can possibly violate customers' privacy and at the same time keep data distribution similar to production, and that takes time and effort, too.
