I've learnt all my pl/sql from Tom Kyte's books, by simply following the examples mostly.

Another book I've enjoyed, more focused on "advanced" PL/SQL, is Connor McDonald's (et altera)
"Mastering Oracle PL/SQL: Practical Solutions".

Just my 2eurocents :)
