My advice ... you need to understand what those applications are doing, how they are designed, why they are designed that way, if they are designed at all ... etc. Products like they ones you mentioned won't help there.
Has someone asked you to look into this or are you just curious? Is there a specific business problem you are trying to solve?
There are low level traces that can be activated which will show you exactly what these processes are doing. Cary Millsap has an excellent book that you may want to look at.
Of course oracle has tools that will help in this discovery process also that you definitely want to look at before deciding looking at anything real low level.
