I haven't actually tried but I would think it would work as long as you ran the catalog, catproc scripts just as if you had done an upgrade. I take it you have already checked your applications to make sure you are not using any EE features like Advanced Queuing that do not come standard with the Standard Edition.

Do you have a test database or the room to build a small database you can test with?

Personally I would prefer to take the opportunity to migrate my database in the version 8 or better yet 8i standard version of Oracle at the same time.
