You can always install it on another system and then copy the install from one to other (as long as it is the same OS of course). It is possible to install without X but doing everything by hand. One method would just be unpacking the jar files into the correct location. You use to be able just to copy the dir structure off the CD but since they went java everything is packed in java files. You can relink by hand or just not even relink if you don't need it. You could take the default db off the install your just create one yourself. Personally I wouldn't want to mess with it. Just install on a machine with X and make a copy of the install.
