Aside from Sybrand's more than acceptable answers, we also create multiple instances on one server to support different RDBMS versions. We might have a software package only supported on one version while another vendor's software package is supported on a second version. So we just install two different versions on the server and run multiple instances. In fact, I have one server that has 7.3.4, 8.0.6, and 8.1.6 instances running at all the same time.

Also in this vain, if you put multiple applications on one instance, then *all* of your applications are tied to the same RDMBS. What happens if one application needs an upgrade to the RDBMS (or a patch), but the other application *can not* live with the upgrade? Then you have an unresolvable conflict. Seperating the applications among multiple instances resolves this conflict.
