This has nothing to do with the Oracle itself. ps is merely echoing the command line you entered - if it contains password it is your problem, not the problem of Oracle or OS. You can avoid this in many different ways. Here are some:

• Use exp/imp with parameter file (see Oracle Server Utility manual) and include username/password in the parameter file.
• In command line don't specify the password - the exp/imp will prompt you for it (you can even leave the username out - in this case it will prompt you for both username and password). You can still include all the other needed parameters in the command line.
• Use the "here documents" redirection (see your unix documentation)
• ....
