  1. Try something involving v$access, which is used by sqldba table monitor
  2. Attach a trigger to your tables that adds up in a counter whenever it is accessed

Remember the best move is to spread the most used tables among your devices, not take them all to another disk (unless it is a fast and/or raid one)
