Well, if you created the database using the CREATE DATABASE command, the default password for SYS is certainly CHANGE_ON_INSTALL. But I've found that for first time installations, it may prompt you for SYS's password. In this case, you pick one that you'll remember. So it really depends on how the database was created. Oh yes, the idea behind the CHANGE_ON_INSTALL is to remind you to change the password once your installation is completed. As you've discovered, the password is well documented so change it at once!
