Don't teach Java though it is taught at the U by others. http://www.outreach.washington.edu/extinfo/certprog/jav/jav_main.asp
I will likely be adding a course next year but have yet to decide Java vs. XML though I am leaning heavily toward XML as I think that is closer to the direction Oracle itself is moving and doesn't put me into competition with the existing Java instruction.
