The version 7 DBA Administration manual has an excellent chapter on backup and recovery that you could read in under an hour that will provide you will a good understanding of the issues and options available to you. There was a documentation CD in the installation CD set.

If you can get a down window then taking a cold backup, Stop instance cleanly and run OS level file copies, is the most straight forward approach. If the database needs to be kept available then you want to look at the hot backup instructions.

If this data is important then consideration should be given to upgrading the system to 8.1 or 9.2 after backups are established. Temporary Oracle DBA help/consultants can be located through the local Oracle user groups or directly from Oracle for short-term assistance.
