Run
alter session set nls_date_format='DD-MON-YY HH24:MI:SS';
to see the time component of hiredate DATE field.
And try using
WHERE hiredate between to_date('01-MAY-81 00:00:00', 'DD-MON-YY HH24:MI:SS')
and to_date('09-JUN-81 23:59:59','DD-MON-YY HH24:MI:SS')
