Help - Customising OSM Quote Letter

I wonder if anyone can point me in the right direction. I need to customise the 'Quote Letter' from Oracle Sales & Marketing. Has anyone done this before and how tricky was it? One basic questions I need answering is..

What creates the quotes merge file that is used to merge into the quote letter template when producing a letter. I suspect it's a user exit but can't confirm this.

Our installation hasn't installed the standard *.dot files in $AS_TOP/resource where can I get one without reinstalling OSM.
