Someone else mentioned using MS-Query and ODBC, which is an excellent method if it's all configured properly.
The approach that I use most often with Excel is to spool the output, then import it as a fixed-column file. Excel is pretty good about figuring the column breaks from the dashes that Oracle inserts after the header row.
One thing that makes this easier is to use the following to commands before spooling (increase either as needed to avoid splitting lines or inserting extra headers):
set linesize 1024
set pagesize 1024
