initial and next extents

I have a question reguarding initial and next entents

When I create a table how do I determine the value of the initial and next extents .......do I grab the majority on the space needed for the table on the initial ??

also how much Physical space(i.e. bytes ) of data dose a varchar2 and a number datatype hole?
