Searching for a good, simple and clear introduction to Relational Databases

Hi,
I'm not knew to databases but I have a friend who wants me to teach him how to create a relational database with Access. The thing is I want to do things right and want to start by giving him some theorical lessons about relational databases design, you know everything about how DB models have evolved from the plain paper to relational databases, why grouping the info in entities, why choosing a primary key, why using foreign keys, etc... without getting too technical, I don't want to teach him anything related to SQL just... databases theory.

I've searched the web for some of this stuff and I haven't came up with anything good, maybe I don't know were the good stuff is and I was wondering if any of you did know were to find quality material about this or evenutally had doc at home that you could send to me. I want this doc to give me an idea of how I should guide my explanation and to point out what are the important things that a newbie should be aware of when creating a database.
