I would recommend you look at DataJunction, http://www.datajunction.com/ which allows you to define source and target file or database structures and then specify mapping on a point-and-click basis.
It's a market leader, it's easy to get up-to-speed with, not expensive and you can download a 30-day trial or get an evaluation CD.
