character sets and varchar/nvarchar

Hi,
I'm getting a bit confused about character sets - if you get your character set to UTF8 does that then mean you can store UTF8 characters in a varchar2 - or, do you have to set national character set to UTF8 and store them in an nvarchar. If it's the latter, then what does the command 'alter database character set' do, as opposed to 'alter database national character set'
