Assuming that write times are important to you:

 Raid 1/0 or 1 for writes
 Raid 5 for reads

This is at best approximate, because so much depends on the number of devices, disk cache, application characteristics etc. I use RAID 1, 1/0 and 5 extensively, but fromexperience it is important to have a large number of physical drives available - a minimum of three per stripe, five is better.
