Not easy. I guess there's always a trade-off when making up an
installer. You can ask a zillion questions so the customer gets only
what they want or need ... or you can ask just a few questions (most
popular technique) and give the customer more than they want or need.
Unless you're really tight on disk space, it's usually better to just
install the client (you do have a couple of choices on the level - eg,
developer or admin). No one will force you to use most of the GUI parts,
other than the GUI installer itself.
