I've done it couple of years back. Followed the directions for offline instantiation
in the manual. Went quite smoothly.
Basically added another master site in the new server using offline instantiation
and dropped the old site.
Did test it also in a test env. I advise you do so also so that you can be comfortable
with the steps.
