Start with Tom Kyte's new book "Expert Oracle Database Architecture" along with concepts manual at http://tahiti.oracle.com.

Followup with Cary Millsap's "Optimizing Oracle Performance" after reading Tom's book cover to cover several times. Rinse and repeat with Cary's book several times.

Don't even think about OEM GUI stuff until you know the architecture backwards and forwards ... why oracle is doing things and how it operates. Tom's book will get you there.
