Then i suggest:
Go with the mini olympics design of small database, insert normalised data, create selects and reports.
Tehn make sure they create a front end using php or java.
The front end could be a little report application that inserts data, deletes data etc.
Secondly another assignment of a Video Hire Shop.
Containing Data:
Customers, Videos, Addresses, Recievable and payables tables.
