Use of the Oracle Universal Installer will require an Xwindows session. This can be supported by running an xterm through an ssh tunnel. One could also run a vnc client to a vnc server running an Xwindows session on the server.

This is covered in the Installation guide which along with the upgrade/migration guide, I would highly recommend that you read.
