Generally it's for ease of access control: If we want to do maintenance on databases and need the users out, but the database up, we can shut down the default listener so users cannot get in, and the DBAs can get in through an alternative one which the users don't have in their TNS. Similarly, our application servers use a third listener that's just for them.

Probably lots of ways to skin that particular cat, but this is how it's done in this environment.
