Nicolas, There are a couple of Oracle Press books on Backup and Recovery. I think Robert Freeman is the author of a book on RMAN. I have not read the book, but I have seen several good reviews from normal people. You might want to search on Oracle Press and rman at an online book site and/or the author.

Naturally the more recent versions of Oracle have manual devoted to the topic or recovery and rman.
