Hold on, guys. Don't we need to clear up the terminology here? In Oracle, a database is just a bunch of (interdependent) files in the filesystem.
An Oracle instance is a set of background processes and memory structures which can open and manipulate a database, other things being equal. A schema is an account within a database which can contain objects, which may or may not be related to objects in other schemata in the database. Lastly, if we create multiple installations of Oracle on the same box, they are completely independent of each other.

So (as ever), doesn't it depend on exactly what we are trying to achieve?

But I accept that if this is a SQL Server question, the short answer is to create one database with multiple schemata - but please let none of these be pubs, Northwind or the other rubbish..
