Some more ideas:

I usually like to put 1 instance per server. And if I am lucky, 1 instance will support 1 application.

Think of it in terms of maintenance also. If you have to take down APPDB01 and it supports your data warehouse, fax addresses, and help ticket system, you essentially may have to take down all those apps for one database maint. window, or kernel change on your NIX box.

Also, if you have needs for different character sets, that may severly limit your options to have multiple schemas. Depends on what the character set supports...some char sets are compatible with others.
