NFS is very unreliable in how quickly it responds. When you are just bringing up a cold db, it's not asking for much. In your log file, it looks like it timed out waiting for some stored procedure to set some constants. Even if you could fix that, NFS is likely to ding you when it is restoring the datafiles, probably near the end of a large data set. Listen to Sybrand.
