If you don't specify anything (never issue set until) RMAN will do a full restore and recovery *including your online redo log files*. So it is quite natural the tables have 'disappeared', that is what you asked it to do.
Rman is *very* reliable and rock stable. Recovery is a breeze. Your problem is your inexperience and your issues are unjustified.
