Ok then, just install any flavor of Linux you like best and drop qmail (www.qmail.org) onto its hard drive and off you go. You may also want to try Postfix (www.postfix.org) and one of its numerous POP3/IMAP addons. And then you just ask your ISP to change MX for your domain to point to your linux box (if you have only one public IP address, you might need to set up your firewall/router to redirect all SMTP traffic to that machine's private address.)
