Restore w/old control file and new archive logs

I have been practicing doing backups and restores of 8.1.7 on Solaris. I can successfully restore all or some of the tablespaces using the backup files, current control files, and complete set of archive logs. This helps if we lose a datafile, or mistakenly delete something critical. My question is this: how do I a complete restore from a hotbackup (including control files), yet also roll forward using all the archive logs created since the hot backup. I want to deal with the scenario where we have lost all datafiles, control files, redo logs, etc, yet we have a complete hotbackup set from a week ago plus a full weeks worth of archive logs.

We are not using RMAN.
