If you would like to consult the Oracle NLS reference you could read that most NLS settings can be specified by 3 methods:

• init.ora parameter (NLS_DATE_FORMAT='DD-MM-YYYY'), no matter where...
• environment variable (export NLS_DATE_FORMAT='DD-MM-YYYY')
• session lifetime secific (ALTER SESSION...)
