I have some servers with 5 database instances running on them. As long as you have enough memory (and enough dedicated to shared memory) and enough disk space, then theoretically, you should be able to handle as many as you want. It really depends on your server. And it depends on your transaction requirements. Lots of database connections might warrant Multi-Threaded Server (MTS), etc.
